The Sake Meter Value (SMV) numerically expresses the sweetness or dryness of sake. Using water as a baseline of 0, lighter sake (less sugar) shows positive values, while heavier sake (more sugar) shows negative values. Generally, +3 to +5 is considered dry, -3 to -5 sweet, but acidity balance is also important for the actual taste perception.
